Puntarella


先日、シェフに変わった野菜をいただきました。
あのー、嬉しいんですが、残念ながらウチは店じゃなく、一般家庭なので・・・（笑）
この写真は、ワトム農園で栽培されたプンタレッラです。
チコリの一品種であるカタローニャという葉野菜の茎の部分をさすそうです。
生で齧ったら、瑞々しいけどホロ苦かったですね。
これを使ったホロ苦いサラダは、ローマの早春の味覚だそうです。

これが花の茎の部分です。
どうやら、これが伸び切ったら終わりのようで、旬の短い野菜ですね。

で、うちに持ち帰って、サラダになりました。
白髪ネギのように縦に薄く裂いたり切ったりします。
これを冷水につけると、端がクルリと巻きます。HOW TO GO ですｗｗ
写真のトマトで仕切った左側がワトム農園、右側がローマ産です。
本場が良いかというと必ずしもそうでなく、生鮮野菜ですから（笑）
苦みやシャキシャキ感、瑞々しさ、全てワトム農園産が優りました。
僕は苦味は苦手ですが、これはおいしかったです。
まだ高級野菜の部類ですが、宮城県や群馬県では量産に入ってるようで、普及するのが
楽しみです。

シェフからドレッシングはバーニャカウダと聞いたので、これを。
オリーブオイルとアンチョビーが混ざっています。

このサラダに、ごはんは合わないだろうと、この日の夕食はガーリックトーストとパスタ。
あと、エビとホタテの香草パン粉焼き。

シェフ、こういう野菜なら、一般家庭でも大丈夫です！（笑）ありがとうございました。
