Le Noir de Bigorre

「La Antica Casa」(時代屋)へ行ってきました。元々友人と約束をしていたのですが、誘ったら
おはまさんも関西からやってきました(笑)
写真左は温前菜フレッシュポルチーニのソテー。手前にあるのはパルミジャーノ・レッジャーノ。
今年初のフレッシュポルチーニです。
写真中央がアンティパストミスティ。中央にあるのが水牛のモッツァレラ。時計で6時の位置に
あるのがマカジキのキャビア添え。8時の位置にあるのがトリッパ。2時の位置にあるのが、
サンマのコンフィ。そして12時の位置にあるのが生ハムいちじく添えです。
写真右のこの生ハム、見た目で解りませんがノワール・ド・ビゴールというフランスはオート=
ピレネー産の24ヶ月熟成ものです。古代のピレネー山脈に棲んでいた豚がスペイン側へと降り
たのが「イベリコ豚」、フランス側へと降りたのが「ビゴール豚」です(笑)
僕は、元々プロシュートの繊細な味よりハモン・イベリコの解り易い味を好きなのですが、
このビゴールは部位が太腿じゃないんじゃないかとシェフに尋ねたほど、味が濃く味わい
深いです。こりゃ絶対タダモノじゃないですね。もう一度、食べたい。

写真左はポルチーニソースのラビオリ。絶妙。うまーーーい!フレッシュなポルチーニと乾燥の
絡み具合が最高です。ちょっと旨すぎですね。
写真右は、がら海老のフリットとカワハギ生ハム巻きのサルティンボッカ。特にがら海老は
殻のままサクっと食べれる揚げ具合が絶妙。頭が超美味。今日は、どうしたんですか?
サービスデーですかってくらいの大盤振る舞いですね。あまりのことにメインの肉料理も
写真を撮り損ねました。申し訳ない。だって食べるのに夢中になってしまったんだもん。
ほんと、素晴らしいコース料理でした。一応、おはまさんが来るので、ポルチーニはお願い
してあったのですが、あそこまでふんだんに使っていただけるとは。あと、最初から最後まで
リチャードジノリの皿に盛られてきましたね。コーディネイトもお見事でした。
