羊の生ハム


かみさんが手作りしたクリスマス・リースを届けるために、日曜日の夜に「La Antica Casa」
（時代屋）へ行ってきました。長居はするつもりなかったのですが、どうしても自家製の
羊の生ハムが気になっていたので（笑）
得意気に見せていただいた生ハムは、すっかりステキに仕上がってました。すごい！
熟成もバッチリ。ほんの軽くスモークした感じもさすがのセンスですね。

サラダ仕立てで出していただきました。
・・・・・旨い！当然、豚とは全然違う代物です。味も濃く、野趣あふれる風情が、じっくりと
噛みしめているうちに伝わってきます。
少し塩が効きすぎたそうですが、全然ウェルカム！
シェフの仕上げ処理で塩からさは緩和されてますし、むしろ日持ちするでしょうからＯＫ（笑）

一緒にだしていただいたオリーブオイルとピアディーナの生地に挟んで食べてみました。
なるほど、うまい。てか、「自家製羊の生ハムのピアディーナ」として出せばいいのに。
イタリアのどこの名物料理か尋ねられたら、北部ロマーニャ地方敦賀の名物だと答えればいい。

そして、このオリーブオイルは小豆島産。ヌーボーです。
つまり、秋摘みでしょうね、これは。
フレッシュで若々しい風味ですが綺麗な味です。クセが無さ過ぎると思うくらいです。
てな訳で、「La Antica Casa」自家製羊の生ハム、堪能しました。

これは、国産紅芯大根のからすみ添え。敢えて国産と書くのは中国系野菜だから（笑）
普通の大根より甘みがあって、食感もいいです。からすみとも合ってました。
オイルがなければ、割烹料理屋さんでも使える食材です（笑）
おいしかったです。

最後にチーズ。僕は食べれないけど少しづつ味見。
左から「タレッジョ」。確かウォッシュタイプだったと思うけど、匂いが穏やかです。
少しねっとりしてて、クリーミーでマイルドな味です。でも、僕は一番苦手（笑）
ロンバルディア地方のチーズのようです。
次が「スカモルツァ」。これクセのあるモッツアレラみたいで食べやすかったです。
相変わらず苦手ですが、これが一番マシですかね。火を通してください（笑）
次が「ブリア・サヴァラン」。フランスのチーズです。
クリーミーです。牛脂肪分が高そう（笑）フレッシュな感じで、本来ならこれが一番
僕に合うところなんですが、苦手な感じの酸味が・・・。ただ、ヨーグルトっぽい酸味なので
僕以外の人には美味しくいただけると思います。
フレッシュな感じと思ったら、開けたてでした。やっぱこの種のチーズは酸化してない状態が
美味しいみたいですね。
